FRIED RICE

2 ½ Tablespoons vegetable oil
½ Teaspoon sesame oil
4 Green onions sliced	
1 Cup frozen baby peas	
1 Medium carrot grated
1 Cup baby shrimp or chopped ham 
3 Large eggs whisked
1 ½ Tablespoons soy sauce
3 Cups cooked cold rice*	
* It is very important it be well chilled
Heat oils in a large sauté pan or wok.Add the scallions, peas, shrimp/ham and carrots.  (Take care to avoid being splattered with hot oil.)  Stir-fry for 1 minute.  Add the rice and stir occasionally for 2-3 minutes as it heats.Push the rice to edges of pan creating a hole in the center of pan.
Pour ½ tablespoon of oil in center of pan and pour in whisked eggs. Scramble until softly done and then incorporate into the rice.  Add soy sauce and heat stirring.
