Spicy Orange Beef

2	Tablespoons oil (corn)				
1	Pound flank or round steak	 thinly sliced
1/4	Cup silvered orange peel
1	Clove garlic minced
1/2	Teaspoon ground ginger
2	Tablespoons corn starch
1	Cup cool beef broth
1/4	Cup soy sauce
1/4	Cup dry sherry
1/4	Cup marmalade
1/2	Teaspoon crushed red pepper (remove seeds first, very hot)
In a large skillet or wok heat oil.  Stir-fry meat (1/3 at a time) until browned.  Return	all meat to the pan. Add orange peel garlic & ginger and stir-fry for one minute.  Mix together remaining ingredients and then stir into the meat.  Stirring constantly until the mixture thickens.
Serve over rice.
The same dish can be made using chicken and Chicken broth.
